Kodubale

People have been happily cooking and baking during the Covid-19 lockdown, I also tried an age old snack - Kodubale a traditional snack from Karnataka. It is a spicy, crispy snack dish that can be done as your monsoon snack

Ingredients:
·         2 Cups of Rice flour
·         3/4 cup of desiccated coconut
·         2 cups of Fried gram(Putani)
·         10 nos of byadgi chilli
·         10 nos of Guntur chilli
* Both byadgi and Guntur chilies depending on how spicy you want it!
·         Pinch of hing
·         Salt to taste
·         Choice of Oil for deep frying, We use sunflower oil.

Method:-
·         Add fried gram, chilies, coconut. and salt to a mixer jar and make fine paste of it.
·         Take a large bowl and mix the paste with rice flour and knead to make smooth firm dough.
·         Add just a small quantity water only if required to make the dough.
·         Divide and shape the dough into small sized balls.
·         Using the palm of your hands rub and roll to make a half inch thick and yet thin long roll.
·         Cut the roll in small strips and join the ends to form a circle.

·         Prepare the oil for deep frying; drop the circles one by one slowly so that it does not break and deep fry on medium heat until it is browned and cooked.
·         Keep the heat on low to medium to it get cooked from the inside as well
·         Store it in air tight container and enjoy it during evening snacks with coffee or tea!
